Cornbread Muffins

We at Bungalow ‘23 are finding as many ways as possible to make our lives easier with our new freezer. Previously we shared our favorite crockpot chili recipe. A triple batch has resulted in many warm meals being just a trip to the freezer and a microwave ding away.

But what good is chili without cornbread? Here is a yummy recipe that was just shared by a friend for intriguing corn bread muffins that don’t actually have any cornmeal. Maybe there is a strange alchemical reaction at work in the muffin pan, or perhaps it’s just a placebo effect, but when you bite into one of these muffins you’ll swear they are made of the most delicious cornbread ever. Try it!

Cornbread Muffins, Hold The Corn
1 egg
1/2 c. milk
1/4 c. oil
Mix all these together.

Add:
1 1/2 c. flour
1/2 c. sugar
2 t. baking powder
1 t. salt

Bake at 400 degrees for 15 minutes. Makes 8 muffins.
